First things first, Google Hong Kong here means google.com.hk, and Google China here means google.cn (or g.cn), all are about the websites and their services.
I. The biggest difference between Google Hong Kong and Google China
Google.cn has been redirected to Google.com.hk, one of the reason is that Google doesn’t want to filter its search results according to China government’s request, so the BIGGEST differences between Google Hong Kong & Google China is that there is censorship on Google China search results, but not on Google Hong Kong.
It doesn’t mean Google Hong Kong does not filter any search results, since some keywords (such as Fuck) are filtered according to the Safe Search, you can get the search results by turning off the Safe Search. But on Google China, you have no choice for Safe Search on or off, all the search results will be filtered by Safe Search.
II. The services redirected to Google Hong Kong from Google China
Three main Google China services have been redirected to Google Hong Kong, they are Google Web Search, Google News and Google Images, which filtered both political and porn keywords on Google.cn.
III. The services which are still run on Google China
Except those 3 that have been redirected to Google Hong Kong, all the other services of Google China are still run on Google.cn, below is the list:

5. Google Dictionary
6. Google Features Search
7. Google Finance
8. Google iGoogle
9. Google Living Search
10. Google Maps
11. Google Music
12. Google Products

17. Google Trends
18. Google Video
You can check out every of the 18 services via the previous post. Google said they would continue to host its maps and music search service in China, but how about the other 16?
IV. The services which are ONLY run on Google China
Among the above 18 services, below services are only available on Google China, not on Google Hong Kong:
1. Google Living Search
2. Google Music
3. Google Products
4. Google Rebang
5. Google Transit （There is a transit feature on Google Hong Kong Maps.)
6. Google Trends
It will be hard to guess if the above 6 services can be hosted in China for a long time in the future.
V. The services which are ONLY run on Google Hong Kong
There are also some services hosted on Google Hong Kong only, not on Google China:
1. Google Desktop
2. Google Picasa
3. Google GTalk (Just for installation.)
The above three services are only available in Traditional language. And below 2 services are only available in Simple Chinese:
4. Customer Search
5. Mobile Maps
And below 3 are both available in Simple Chinese and Traditional Chinese:
6. Google Alerts
7. Google Dir
8. Google Groups
As you can see, there is some mess on Google Hong Kong now, since the services in Traditional Chinese are different from those in Simple Chinese.
